本實驗室研究主軸為食源性病菌與食品安全防治,內容包含食源性病菌之表面構造及生物膜生成探討,改良食源性病菌採樣與檢驗技術,以及利用生物膜模型和生化技術開發完善的生物膜偵測、防範及清除策略。本實驗室也將與其他專業研究室及產業界合作,進行涵蓋食品微生物、食品加工、包裝和大數據分析之整合性研究,以促進食品安全文化的發展。
Our research focuses on detecting foodborne pathogens and advancing food safety. Current studies investigate (1) the surface structures of foodborne pathogens and their role in biofilm formation, (2) the enhancement of sampling and detection technologies for these pathogens, and (3) the development and refinement of biofilm models and antibiofilm strategies. Additionally, we collaborate with research laboratories and industry partners to conduct multidisciplinary studies that integrate food microbiology, food processing, packaging, and big data analysis, all aimed at fostering a strong food safety culture.
Study of pathogenic biofilm development and microbial interactions
This study will focus on how bacteria manipulate their cell surface structures and exopolymers for biofilm formation, as these structures are the critical factors inducing cell colonization and cell-to-cell interaction. Additionally, quorum sensing signaling has been found in a variety of foodborne pathogens. It will be worth studying and exploiting quorum sensing signaling to control polymicrobial biofilm formation.
Develop strategies for intervening in pathogenic biofilm formation in the food industry
This project will establish biofilm models and identify key factors for microbial interactions to improve the detection and control of foodborne pathogens/biofilms. The work can also lead to a collaboration with food chemistry labs for screening natural compounds for biofilm intervention.
Food microbiome analysis using sequencing techniques
The goal of this study is to identify contamination sources in food-processing environments and determine the composition of the microbial community from those sources through in silico analysis and sequencing techniques.
